Bo's Sandwich Club set to open later this month

New business is a division of Bo's Bar and Stage

A popular restaurant that serves as a staple in Red Deer's live music scene will expand its brand later this month with the opening of a new takeaway sandwich shop.

Bo's Sandwich Club, a division of Bo's Bar and Stage, will open its doors on July 16. The new business will be located in the city's Capstone neighbourhood.

"Everyone has a fast-paced lifestyle these days. This is a truly to-go concept. You grab your sandwich and you can go enjoy it on the Troubled Monk's patio, you go enjoy it down by the river or you can just eat in your car," said Brennen Wowk, owner of Bo's.

"We're really proud of the sandwiches we have there. We think a place like this is something Red Deer was in need of."

Bo's Bar and Stage was established in 1996. Wowk said this is the right time to introduce a new business under the Bo's umbrella.

"During the pandemic Bo's began doing catering. We catered all sorts of events and weddings, from 20 people to 300 people," said Wowk.

"Our catering just spanned outside of the scope of the Bo's kitchen. It's hard to maintain a busy, fast-paced restaurant with a catering kitchen all under one roof."

The decision was made to move the catering division to a new location in Capstone.

"Once we started developing the space, we saw how busy and lively Capstone is. There are so many cool businesses down there and this was an opportunity to take this concept I've had in my head for a while and bring it to life," he said.

From there, Bo's Sandwich Club was born. Wowk said he's excited to expand the Bo's brand, nearly 30 years after the original location was opened.

"For us, it's always about evolving and changing up what we do. We're about good time, good foods and taking care of our city," said Wowk.

Despite still being about a week and a half away from opening, the business' Instagram page already has more than 700 followers.

"People love sandwiches and they're excited. When we've been there (setting up the business) there are 20 or 30 people dropping asking when we're open. There's a big appetite for it – these sandwiches are huge and they're going to feed that appetite."
